Jajka faszerowane wędzonym łososiem

  • 4 jajka
  • 100 g łososia wędzonego
  • 3 łyżki majonezu
  • szczypiorek
  • pieprz grubo mielony


  1. Jajka ugotować na twardo. 
  2. Po przestudzeniu przekroić na połówki, wyjąć żółtka i ugnieść widelem. 
  3. Dodać posiekanego łososia, grubo mielony pieprz, szczypiorem. 
  4. Wymieszać z majonezem. Pastę przełóż do białek. Udekoruj szczypiorkiem.

Jajka po benedyktyńsku

Składniki
  • 4 bardzo świeże jajka
  • do gotowania jajek: 100 ml białego wytrawnego wina lub octu słodowego (ewentualnie jabłkowego czy octu z białego wina)

Sos holenderski
  • 280 ml octu z białego wina
  • 4 posiekane szalotki
  • 20 ziarenek białego pieprzu
  • 750 g masła (do sklarowania—powstanie z tej ilości ok. 500 ml klarowanego masła)
  • 6 żółtek


Do podania
4 bułeczki
4 plastry gotowanej szynki
sól i pieprz do smaku


Jajka w koszulkach
Do garnka o wysokości ok. 20 cm nalać do połowy wodę. Doprowadzić wodę do wrzenia, wlać ocet. Zmniejszyć płomień, tak, by woda z octem była na granicy wrzenia. Wbijać jajka po jednym, delikatnie przegarniając wodę wokół łyżką. Obgotowywać jajka przez około 2-3 minuty. Białko powinno być wokół ścięte, żółtko ma pozostać półpłynne. Wyjąć jajka po jednym łyżką cedzakową. Włożyć jajka do garnka z zimną wodą, aby zastopować proces gotowania. Przed podaniem trzeba je włożyć do gorącej wody, aby się podgrzały.

Sos holenderski
Do rondla wlać ocet, dodać szalotki i ziarenka pieprzu. Na małym ogniu zredukować płyn do dwóch trzecich objętości. Na małym ogniu stopić masło w garnku z grubym dnem. Zdjąć z ognia i odstawić na chwilę. Łyżką cedzakową szumować pianę z wierzchu, aż zostanie na dole klarowne masło. Na garnku z gotująca się wodą ustawić metalową lub ceramiczną miskę z okrągłym dnem. Włożyć żółtka, dodać 1 ½ łyżki odparowanego octu (należy go uprzednio przecedzić). Resztę octu można przechowywać w lodówce do dwóch miesięcy. Ubijać żółtka z octem na parze na gładką emulsję. Zdjąć garnek z ognia, nadal ubijać energicznie, dolewając po trochu tyle sklarowanego masła, aby powstał gęsty, kremowy sos. Resztę klarowanego masła można przechowywać w lodówce do dwóch miesięcy.

Sposób podania
Przekrojone na pół bułeczki opiec w opiekaczu lub w piekarniku. Ułożyć połówki jedna na drugiej, na wierzchu umieścić po plastrze szynki. Na szynce ułożyć podgrzane w gorącej wodzie jajka w koszulkach, polać sosem holenderskim. Podawać natychmiast.

Green Bean, Egg and Quinoa Salad

Servings: 4

Ingredients:
  • 1 cup cooked red quinoa
  • 2 cups green beans, steamed and cut into 1 inch pieces
  • 1 ripe plum, thinly sliced
  • 2 hard-boiled eggs, sliced
  • 2 teaspoons sesame oil
  • 2 Tablespoons fresh lime juice
  • ½ teaspoon sea salt
  • ground black pepper


Directions:
  1. Combine the quinoa, beans, plum and egg in a large bowl.
  2. Drizzle with the sesame oil, lime juice, salt and pepper. 
  3. Mix well and enjoy!


Nutritional Analysis: One serving equals: 225 calories, 7g fat, 270mg sodium, 31g carbohydrate, 5g fiber, and 10g protein

Avocado Deviled Eggs with Bacon



Ingredients
Make 24 pieces

  • 12 eggs, hard-boiled and peeled
  • 2 ripe avocados
  • 1 garlic clove, crushed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon lemon juice
  • 1 teaspoon mustard (optional)
  • 6 pieces of bacon


Directions
Cook bacon in a pan on medium heat until crisp.  Drain on paper towel and set aside. Cut each hard boiled egg in half and carefully remove the yolks.

In a mixing bowl, mash 6 full yolks with the avocado, garlic, olive oil, paprika, lemon juice and mustard.  I don’t use all of the yolks because the avocado will make it rich enough.  It should be a creamy consistency after you fully mix the ingredients.  Take your cooled bacon and finely chop into small pieces and add to mixture.  Stir together.

Spoon each egg half with mixture.  Sprinkle paprika on each egg.

Egg Salad with Scallions and Celery


Ingredients

  • 4 hard boiled eggs, coarsely chopped
  • 1 stalk celery, including the leaves, finely chopped
  • 2 green onions, chopped
  • 2 tablespoons low-fat mayonnaise
  • salt and pepper to taste
  • pumpernickel cocktail bread


Directions
Mix all ingredients and serve on pumpernickel squares.

Portuguese egg tarts


(Makes 10 tarts)
INGREDIENTS A (CRUST):
1 box of Betty Crocker Pie Crust Mix (Net Wt 11 Oz) or 1 frozen and rolled Pillsbury 9-inch pie crust
3 tablespoons melted butter
1/3 cup cold water
INGREDIENTS B (FILLING):
4 egg yolks
1/3 cup of sugar (or slightly less if you don’t like your Portuguese egg tarts too sweet)
1/3 cup of heavy whipping cream
1/3 cup of milk
3 drops of vanilla extract
METHOD:
Stir the pie crust mix, cold water, and melted butter until pastry forms a ball. On a floured surface, roll the dough and cut it into 12 balls. Set aside.
Use an electronic hand beater to blend Ingredients B. Beat for about 3 minutes and strain the filling through a strainer. Set aside.
Preheat oven to 400 F. Butter the muffin pan.
Flatten the balls into small rounds and fit them well into the muffin pan by pressing firmly on bottom and side (do not over stretch). Fill the pie crust dough with the egg mixture (about 80% full).
Bake the Portuguese Egg Tarts at 400F for about 15-20 minutes or until the filling turn brown.
COOK’S NOTE:
If you use Pillsbury frozen pie crust, you just use it as is, meaning just cut it out into 10 rounds and fit into your muffin pan.

Baked Egg and Toast Cups with Tomatoes and Cheddar

TIP: If you prefer, you can scramble the eggs then pour them into the toast cups.
INGREDIENTS6 slices from Panera Bread White Whole Grain Loaf, crust removed
1/4 cup melted butter
6 large eggs
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup finely chopped grape tomatoes
1/4 cup finely chopped red onion, optional
1/2 cup shredded sharp cheddar cheese
1 tablespoon chopped fresh parsley, optional
DIRECTIONSPreheat oven to 350ºF. Coat 6 jumbo muffin cups with cooking spray. Brush both sides of trimmed bread slices with melted butter. Press 1 bread slice into each muffin cup, molding it to the shape of the cup. The bread corners will rise out of the edges of the cup. Bake until lightly toasted, about 15 minutes.

Break 1 egg into each toast-lined cup and season with salt and pepper. Add chopped tomatoes and onion, if using, dividing equally among muffin cups. Top with cheese and bake until cheese melts and eggs are set, 15 to 20 minutes. Scatter on parsley, if using.

Makes 6 servings.

Cook: 30 minutes

Braised eggs with tomato, spinach and yogurt

a delicious and nourishing dish, serves 4

2 tbsp olive oil, plus extra to finish
  • 3 medium onions, thinly sliced
  • 200g baby potatoes, cut into 5mm thick slices
  • ½ a red chilli, deseeded and finely chopped
  • 200g cherry tomatoes
  • 1 garlic clove, crushed
  • 150g baby spinach
  • 4 free-range eggs
  • 100g Greek yoghurt
  • 1 tbsp coriander, chopped 
  • Salt and black pepper
1. Heat the olive oil in a medium saute pan. Add the onions and cook on a medium-high heat for 5 minutes, stirring occasionally.

2. Add the potatoes, chilli and some salt and pepper, reduce the heat to medium-low and continue cooking and stirring for about 20 minutes, until the onions are soft and golden brown and the potatoes are cooked. Add a little water if the vegetables start sticking to the pan.

3. About 5 minutes before the potatoes and onions are ready, place an iron pan on a high heat and leave until it is red-hot. Roast the tomatoes for 3-4 minutes, tossing gently, until charred. Remove from the heat.

4. Stir the garlic and spinach into the onions and potatoes and cook for a minute or two, until the spinach wilts. Taste and add more salt and pepper if needed.

5. Spread the potato and onion evenly over the base of the pan and then carefully crack the eggs on top, trying not to break the yolks.

6. Cover the pan and cook on a medium heat for 5-7 minutes, or until the egg whites are set. Remove the pan from the heat and spoon over the yoghurt, avoiding the yolks.

7. Sprinkle with coriander, then carefully place the tomatoes on top and finish with a trickle of oil. Bring to the table in the pan.
