Glühwein / Hot glow wine

This traditional hot beverage, called Glühwein in Bavaria, is a festive seasonal drink that can brighten everyone's holiday spirits.

Ingredients
  • 3 quarts water
  • 6 tea bags (black tea)
  • 1 lemon, cut into wedges
  • 2 oranges, thinly sliced
  • 1/2 cup sugar, plus more to taste
  • 1/2 gallon red wine
  • 1 pint dark rum (optional)
  • 3 cinnamon sticks
  • 6 whole cloves

Directions

1. Bring the water to a boil in a large nonreactive pot. Add tea bags. Turn off the heat and cover the pot. Steep tea for 5 minutes.

2. Remove tea bags. Add lemon, oranges, sugar, wine, rum (if using), cinnamon, and cloves. Simmer on low, uncovered, for about 10 minutes. Remove cloves and cinnamon sticks. Taste and add more sugar if desired. Serve warm.

Gingerbread Cookies





Makes 36 medium cookies

Ingredients

  • 2 3/4 cups all-purpose flour, spooned and leveled, plus more for the work surface
  • 1 1/4 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2/3 cup granulated sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 cup confectioners' sugar

Directions

  1. Heat oven to 350° F. In a large bowl, whisk together the flour, ginger, cinnamon, baking soda, cloves, and salt.
  2. Using an electric mixer, beat the butter and granulated sugar until smooth. Add the molasses and egg and beat until fluffy, about 2 minutes.
  3. Reduce the mixer speed to low and gradually add the flour mixture, mixing until just incorporated. Shape into a disk. Wrap in plastic wrap and refrigerate until firm, at least 30 minutes.
  4. On a floured surface, roll the dough to ¼ inch thick. Using cookie cutters, cut into shapes; place on parchment-lined baking sheets.
  5. Bake until firm, 10 to 12 minutes. Cool slightly on baking sheets, then transfer to wire racks to cool completely.
  6. Place confectioners’ sugar in a small bowl; gradually whisk in 1 tablespoon water until a thick icing forms. Transfer to a resealable plastic bag and snip a small hole in one corner. Decorate cookies as desired and let set.
  7. Store in an airtight container at room temperature for up to 1 week.

Piernikowe ciasto na szopkę i choinkowe ozdoby


Ciasto:
1,5 kg mąki
50 dag cukru
35 – 40 dag miodu
20 dag masła
6 żółtek
3 białka (pozostałe białka można przydadzą się do smarowania ciasta oraz do zrobienia „śniegu”)
8 płaskich łyżeczek sody oczyszczonej
pół szklanki mleka
2 opakowania przyprawy do piernika
4 łyżki ciemnego, gorzkiego kakao
zapach pomarańczowy
Karmel do klejenia:
2-3 łyżki cukru
Słodki śnieg:
min. 3-4 białka
cukier
sok z połówki cytryny

Wykonanie:
Zacznij od przygotowania karmelu do ciasta: 4 dag cukru zrumień silnie na patelni, ostrożnie wlej pół szklanki gorącej wody (uwaga, pryska!), zagotuj. Pozostały cukier zalej gorącym karmelem z wodą, wymieszaj, dodaj masło, miód, kakao, przyprawy – zamieszaj, podgrzej do rozpuszczenia cukru i odstaw do przestygnięcia. Rozpuść sodę w gorącym mleku. Gdy masa cukrowo-miodowa przestygnie dodaj ją do mąki, wysypanej na stolnicy. Dodaj rozpuszczoną sodę z mlekiem, wymieszaj całość łyżką. Dodaj 3 całe jajka i 3 żółtka, zapach i szybko wyrób twarde ciasto. Zapakuj je w folię i włóż do lodówki na min. pół godziny. Gotowe ciasto może leżeć w lodówce nawet kilka dni, co daje Ci możliwość rozłożenia sobie pracy. Ciasto posmarowane białkiem piecz na blasze wyłożonej papierem, w temp. 180-200 stopni przez 25-30 minut.
